During fermentation process in wine production, wine grape sugar is transformed into water, alcohol and carbon dioxide. These are key ingredients for any good quality wine production. However, Carbon Dioxide, if not monitored and controlled , can be very dangerous. Concentrations of carbon dioxide within the headspace of a fermenting tank can reach very high and dangerous levels. Apart from the risks of being exposed to high concentrations of carbon dioxide for an extended period of time, it can also cause potential asphyxiation of winery workers due to displacement of Oxygen. Entering into indoor fermentation area without adequate ventilation and CO2 monitoring can lead to gas poisoning incidents.

The infrared measuring method with integrated temperature and drift compensation stands for highest accuracy, selectivity and reliability. Areas of monitoring within the winery include fermentation rooms, storage tanks, barrel cellar and bottling room.
